It is made with okra, cornmeal, flying fish, and either an onion, chives, thyme, garlic, or fresh pepper sauce. The fish can either be battered, fried, grilled, or steamed.
Many different types of meat are eaten in Barbados, such as pig, goat, and sheep. Souse is a popular meal made with the ears, snout, head, feet, and even tail of the pig. Every part is finely chopped and pickled with lime juice, cucumbers, and hot peppers. This meal is served with a pudding that is made of mashed sweet potatoes that were steamed inside of a pig’s intestine. |
